Prepare pizza dough from your favourite recipe.
Use a mixture of greens such as Cabbage, young spinach, curly endive or sprouting broccoli.
Cook greens, being careful not to overcook. Then chop finely
Heat 3 tbsp of Extra Virgin Olive Oil (Meridiano)
Add 2 cloves of chopped garlic.
As garlic starts to brown add a handful of stoned Leccina olives and a handful of salted capers. Mix in the greens.
Roll out 1/2 of the pizza dough very thinly and line a pie dish. Then cover with the green mixture. Brush the edges with a little water.
Then roll out the other 1/2 of the pizza dough and cover. Pinch together around the edge. Cut a slit in the top dough.
Bake in a moderate oven for 30 minutes.
Serve hot or cold - Ideal for picnics.
